Chicken Tortilla Soup

Cooler temps call for chicken tortilla soup, am I right?? πŸ“πŸ€—

Easy Chicken Tortilla Soup:
1 lb. Chicken
1/2 chopped onion
1 Bell pepper
3 cloves of garlic, minced
3 medium carrots, peeled and chopped
1 cup of your fav salsa
(or sub 1 can green chillis and 3 Roma tomatoes)
2 stalks celery, diced
1 1/2 quarts chicken broth
Butter
1 Tbsp. Cumin
2 tsp. Paprika
1/2 tsp. Cayenne
2 tsp. Salt
1 tsp: chilli powder, heaping
1/2 cup packed cilantro or 2 tsp. dried
Juice of a lime

Directions:

  1. Sauté all veggies in butter until just tender 🀀
    (garlic last or else it will be bitter)
  2. Add stock and bring to a soft boil
  3. Add uncooked chicken
  4. Boil about 10minutes until chicken is cooked through
  5. Take chicken out and shred on a cutting board, then place back into pot
  6. Add all seasonings and juice
  7. Simmer on low about 15 minutes, the longer the better
  8. Garnish with tortilla strips, guacamole, sour cream, and cheese
